It’s October which means pumpkin spice EVERYTHING! While I’m not a huge fan of Pumpkin Spice Lattes, there are some pumpkin flavored things I will get behind. This recipe is a Pinterest OG Pin. It was my first pinned recipe to try. And when I say it’s easy-mode, I mean that. It really doesn’t get more easy mode than this as there are literally two ingredients (plus whatever spices you want to add). You dump it all in a bowl, mix, bake, and enjoy. The other great thing about these muffins is they are vegan friendly, and if you want to, they can be gluten free as well, you just need to get the GF cake mix.
1 box Yellow Cake Mix (just the mix, no need for eggs, oil, water)
1 15oz can of canned pumpkin
Pumpkin Pie Spice
Cinnamon Glaze (powdered sugar, milk, ground cinnamon)
Cream Cheese Frosting (butter, cream cheese, vanilla, powdered sugar)
Muffin tin of any size or Loaf Pan
Preheat oven to 350 degrees. Combine cake mix, canned pumpkin, and the spices of your choice (all to taste) in a large mixing bowl. I suggest going a bit more on the heavy side with the spices to balance out the sweetness of the cake mix. Just keep tasting as you add your spices. Mix thoroughly to eliminate any clumps of the mix. Batter will not be super smooth, but you should have the majority of the lumps mixed out. I used a well-greased mini-muffin tin for a bite-sized treat, but you can use whatever you want. If you want to use cupcake liners, that’s fine too. Bake 19-23 minutes until a stick poked in the middle comes out clean. Mine took around 21 minutes. You can devour these warm or cool. If you choose to add a topping, go for it. These muffins are sweet so I don’t usually do anything else to them.
This also makes a nice sweet dip to serve with graham crackers or apples. Since there are no eggs in this recipe, you can eat it raw.
