Who doesn’t love a Caesar salad? It’s fresh, it’s yummy, and when prepared the correct way, it can be healthy too. One of my favorite things that my mom makes is her cesar salad, and bonus…there are no anchovies in this recipe.
It’s a simple recipe. You need Parmesan cheese (grated), one egg yolk, garlic, tabasco sauce, olive oil, worcestershire sauce, cracked black pepper, romaine lettuce and croutons.
Crush the garlic into the base of your bowl. The amount of the garlic, and pretty much everything else in this recipe is up to you and your taste buds. Mix in a 1/4 cup of parmesan cheese with the garlic. Grab a whisk. Start drizzling olive oil while whisking. I match the olive oil and parm cheese. 1/4 cup of each. Add in your egg yolk, or if you don’t dig the idea of raw egg, you can substitue a tablespoon of dijon mustard. I tried cutting it out all together and the dressing just didn’t emulsify Next up, the juice of half a lemon, a couple dashes of the Tabasco and worcestershire. Crack some black pepper, whisk and you’re pretty much done.
Toss in the romain lettuce and croutons and VOILA! You have a Caesar salad. You can be classy and put it on a plate, or just dig in to the bowl.
